Meat processing

Hey all, I'm looking to have some duck and deer meat turned into pepperoni sticks or some other type of sausage. I was wondering if you had any suggestions on where to take it, preferably in the Eugene area or Corvallisarea, or somewhere in between, but I'm open to going somewhere else too, if it's worth it. Also, what types of sausage/meat sticks do you recommend and do you have an estimate on price/lb and turn around time? Thanks for any suggestions.
