Nope....ever try Sandhill crane? Friday I will be cookin Sous Vide Sandhill Crane with a fast sear on the green egg after brushing them with a little smoked chicken fat...I am really lookin forward to it!dudejcb said:Diamond score the skin on the back and breast to help render the fat out. rub on spices & let sit a while. bake at 350 for 40 to 45 minutes. Or, could cut down the back and flay it flat and slow cook like ribs.
Specks are the best eating waterfowl there is.
