Roasted specklebelly recipe?

Anyone have a good specklebelly recipe? I shot my first speck yesterday and want a memorable dinner out of it as well. Thanks for the help guys and gals

Heck yea! For us Ohio'ens that's a once Ina lifetime opportunity.
Your right. Going to Montana here pretty soon and I imagine I won't be seeing anymore specks. Getting one of these guys mounted

Diamond score the skin on the back and breast to help render the fat out. rub on spices & let sit a while. bake at 350 for 40 to 45 minutes. Or, could cut down the back and flay it flat and slow cook like ribs.

Specks are the best eating waterfowl there is.

Nope....ever try Sandhill crane? Friday I will be cookin Sous Vide Sandhill Crane with a fast sear on the green egg after brushing them with a little smoked chicken fat...I am really lookin forward to it!

Thanks all ended up cooking it rare on the grill light seasoning. Was amazing. Sprigpig is mounting the other ;)
