For ducks I'd probably go with Mallards just because that's really all we shot growing up. We shoot a lot of woodies here and they are really tasty too.

For the geese, I do the crock pot BBQ like rick mentioned usually, or jerky. If I'm feeling ambitious the best way I have eaten goose is to cube a bunch of breasts into about 1 inch cubes, then wrap each one with half a piece of bacon and stick a tooth pick in it. After that, put them all in a big bowl and empty an entire bottle of zesty italian dressing into it and let them marinade in the fridge as long as you wish. Then just throw them on the grill until the bacon is done and enjoy. You will start a grease fire in the grill so have a spray bottle handy. Just dont overcook the goose or it can get tough.

Bacon-wrapping has always turned out whenever I've done it. Duck we usually just wrap a whole breast filet and grill it in the same way. It takes off a lot of the gamey taste.

Anybody who says canadas or snow geese taste bad hasn't learned to prepare them properly. soak the breasts in salt water to draw some of the blood out. Use a marinade that contains acids to break down the tissue, much like how you would do lean beef cuts or venison. grill to 135 degrees. Any more and it's overdone. Bacon wrapping works good, but stuffed breasts, kabobs, or just cubed meat grilled are all great.
Juvy snow goose is one of the most tender and easy to cook dark meat game birds there is.

For ducks, I like wood ducks best, but really by mid october, all of the corn fed dabblers taste the dame to me. Never really shot any divers so I can't comment on those.

I would say teal and woddies but they all eat good to me... Couple guys talkin bout getting the gamey taste out I noticed. Seems like if u didn't want some gamey taste it would be cheaper to buy chicken :huh: .... I just try to use spices, marinates, and recipes that compliment the "gamey taste" instead of hide it

What kind of spices and marinades? If it's a family secret or something I don't have to know but I would love to try it sometime.

Grind up the goose meat into chili, great way to use all that meat. Some beans, peppers, any other seasoning and it is great. Since it is ground there is no need to worry about any toughness. Teal is my favorite duck. The best way to cook a merganser is to cover the meat in manure, cook at 350 for 45 minutes, then throw out the merganser and eat the manure. It would taste better than a merganser anyway!

The first thing I do is let em set in fresh water.. Not salt, not milk, not coke(although it works decent).. Just fresh water for bout day changing the water twice... Pulls any excess blood from shot bruising out etc... I have a whole list of stuff man.. One of the quick and easy ones I use is louisiana hot sauce, brown sugar, splash of whiskey (only a splash cause sometimes it'll over bear the meat taste) and what ever your favorite BBQ spices are... Then u can bacon wrap, smoke by itself, butterfly and stuff it to smoke, just get creative... If u have 10 breast try 10 diff things and perfect the one u like most..

I've usually soaked them in buttermilk but I'll try straight water and see how it compares. The Louisiana hot sauce and brown sugar sounds interesting. That'll probably be the one I try first. Thanks!

I've never actually tried buttermilk but for sure water is cheaper and works.. I picked it up from ole phil Robertson and I figure he should know how to cook em.. If u have anymore questions just feel free to pm me.. It may be easier to email u some of the ways I cook em... I apologize again I'm not good with measurements at all.. I never measure or keep track of stuff and have never written anything down.. It's all from memory so u will have to bear with me on that one

I think duck and goose varies radically depending on what they're eating.

I've had corn fed goose/duck, eel grass fed goose/duck, rye grass fed goose/duck, tundra fed goose, etcetera. They all taste different.
