Carrier latch is probably bent. It can happen if you drop the hammer with the trigger assembly out of the gun. It can also get bent other ways or have a loose pin. There are other possibilities, the carrier dog follower being gummed up, but that is most likely. New latches are about $5 at Brownells. Before you order any parts I would give the trigger assembly a good cleaning with a solvent and a toothbrush first.

Make sure the forearm support assembly(as labeled in owners manual) is seated all the way against the receiver. With disassembly and reassembly this part can slide forward on the magazine tube. If it isn't seated against the receiver the bolt will not stay open.
this is common.....depending on the number of rounds through your gun
I have replaced most internal parts of my 1187
I truly love that gun and have killed thousands of ducks with it....I do not
believe they are meant to shoot high volumes of rounds
