What amount of thinsulate is good for 20 to 60 degree weather. 800 or 1600 gram.

depends, is it mostly 20s or mostly 60s when you are hunting?

I have 1000 gram and mine are fine the entire season in MN. They do start to get cold when it is in the 20s, but part of that is having good socks. I found that having my feet in the water was warmer than standing in an aluminum jon boat  . And you could also use foot warmers. So lots of options in the end you'll probably be happy with either one.
