are Scaup and bluebill the same thing? never tried eating one, how are they smoked compared to a mallard?

There are greater bluebill and lesser bluebill. They're both considered Scaup.. They taste like any other diver i think, but i haven't had any smoked duck yet.

I don't smoke any birds, don't care for smoking personally.I do process almost all my birds though, summer sausage, landjagers, slim jims and what not, after processing you cannot tell the difference between a bluebill and a teal.Just cooking them up they are alright, not the best table fare but I have eaten plenty worse

Cooked the right way, they taste just fine. I'm not big on Breasting any bird so I pick most of the birds I'm going to eat.
stuff them full of a sweet dressing, bread, apples raisins.... put breast down in a roster with 1/4 in of 7up or orange juice. If it isn't done in 2 hours at 325-350....it will never get done....
almost forgot....always put a hunk of onion in the neck.
I grew up on all kinds of duck living on the mississsipp river but divers are not that bad, cans and redheads are probably the best though.
if I could pick, wood ducks all day........easy number 1 duck to eat! :salude:

blackheads and broadbills are also common nicknames. i wrap the breasts in bacon and grill em or put them in a stew.
