My Brisket went through the smoker just fine. 17 hours. But, I didn't wrap it in foil soon enough and the bottom portion got a little dried out and tough. Fortunately with the whole untrimmed deal there was plenty of good meat to enjoy. Of course, 13 lbs of brisket for 2 was a little much. But I have to admit, it is nice having BBQ for lunch.
Now onto real smoke. Need to stock up on good cigars for clays season. I'm thinking a box of Rocky Patel's might be on order soon.
