Meat processor

Anyone know of a good place to get some goose sticks made up? I live north of Champaign about 30 miles. We are getting into the geese pretty good up north and I want to get some meat processed. Thanks in advance!

Buy a grinder, stuffer and digital smoker and you can do them yourself.

Wurst Kitchen, Aurora. All pricing available on their website. Goose hunters drive from out of state to drop off. Quite a few I know use them as do I. They have been in business for quite some time. Great processing.

Not sure how to take that since I never used another processor. $5 a pound is not cheap when you drop 30-50 pound orders off a few times a season.

OK time for my .02 cents.if you think 5 bucks a pound is a lot lets think.if you have no decoys and you are a weekend warrior and go to a hunt club 2 geese cost about 50 bucks a pound ,but on the other hand if you pay for a lease and a couple dozen decoys not including calls ,shells ,a gun ,lic. and all the other trinkets and window stickers and your duck dynasty want to be hat. what is the goose per pound then.so the way i see it 5 bucks is not bad. as long as it taste good whats the problem. P S killer thanks for putting on the butcher i looked at the web sight and it looks like a good place to go to .

$5 a pound is very high, but in northern IL you should be used to getting screwed. Places in SIL run about $2.25-$3.00/lb. I had some made at Toms in Mascoutah and it turned out very good.

And I'm sure a gallon of milk and gas pricing isn't the same as SIL either. It's not a matter of "getting screwed."

I've just heard that the place is killer. They've been in business for over 100 years and know how to make sausage. You bring in 20 lbs of meat, they double it with pork or beef, now you're paying $5 a pound for 40 lbs of sausage. One of the guys in my club is doing a test run this week. We'll find out.

Ah, I see. I misread of course. It's great stuff. Half pork, cheddar and jalapeno is my favorite. Integrity in their work. The meat you bring in is the meat you shall receive.

Most processors have different prices for different things, we have been doing are own for 10 years now, but back then, summer sausage was the least expensive, $2.50 a lb, cut 50%, slim Jim's were the most expensive at $5.00 lbs, cut 20%. Things like land Jagger's , brats , and everything else fell some where in between. Are last year fee's were big bucks, so I bought a Dehydrater $500, grinder $250, a jerky attachment for the grinder $125, 50lb mixing tub $350. I make lots of jerky, cut it 50% with ground beef. The dehydrator holds 50lbs, 25lbs pounds of goose ??? Per lb, 25lbs of G/Beef, $100, spices, $10, 2 hours to grind it and clean up, marinate over night, 2 1/2 hours the next day to run it through again, put the racks in the dehydrator, and clean up. Depending on the moisture of the meat 16 to 24hrs later you have jerky. Bought a smoker, $300, and a 50lb stuffer $350, about 3 years ago, but it's still in the box, can't smoke in the basement over the winter, thinking about putting a vent hood in the garage this summer. Made 200lbs this year, are season was cut about 6 weeks short. So it all realavant, to what you consider expensive.

We used Eric's on HWY 50 in Brighton, he is closed now
