Ever try eating a farm raised duck? It's not the same. Not at all. Go buy one at the grocery store and try. Post up what you think and I mean compare it to a wild duck. Maybe swamp has a good recipe. BLACKENED duck?
Farm duck is not the same at all. Both are very good but normally farm raised duck has a lot of fat and will be more like eating chicken as far as the meat texture. The best duck I have ever had was in a restaurant in New Orleans and I "garontee" it was a tame one!
We bought a duck once at the grocery store. Don't know what I was thinking...buying an 8-pound duck. Must've been stoned er sumthin. When we baked it it was beautiful. I eagerly sliced into that baby anticipating sheer wonderfulness of cuisine and what I got was a slice of nice duck meat that I chit you not...had a layer of fat about an inch thick on top of the breast meat. Tried choking it down and couldn't. It was just too greasy. Tossed it into the trash. ¨Wanton wasted it¨.
They used to serve duck every Wed. at Terminal camp in Valdez during the early months of 1975 during the Alaska pipeline. Then they stopped for some reason, but I thought they were some of the best birds I had ever eaten. I'd get two whole ducks each Wed night, and take one for lunch the next day. Couldn't get enough!
So the words Fall and Autumn are not to be capitalized? They are in my world.
