I have over 2cups of bacon fat, I was planning on upping that in the recipe, think that's enough?

2 cups would not be enough. double it.

Just finished making it.
3.5lbs goose/divers
4lbs wild hog (I purposely left as much fat as possible when I processed these)
1.5lbs bacon
1cup bacon fat

Sitting in the fridge, but the test patties were amazing. Seemed finer than store bought, but held together well and tasted great!

Hmm...I must have misread your quantities somewhere, I thought you had 15 lbs. of meat to process.

I did. I refroze 4lbs of goose and 1.5lbs of pork when I didn't have enough pork thawed to make the ratio right. Being my first attempt, I figured 9lbs was a sufficient test run.

How do you cook jambalaya in the oven? I've always done it in a large pot over the stove.

cook it like you regularly do, but when you add the water, start pre-heating the oven to 350*. Finishing it in the oven is dummy proof. No way to burn the bottom of the pot. :thumbsup:
