How do you cook jambalaya in the oven? I've always done it in a large pot over the stove.
cook it like you regularly do, but when you add the water, start pre-heating the oven to 350*. When you add the rice, put the pot in the oven for 20 minutes. pull it out and flip the rice...stir in the meat evenly taking care to scrape the bottom of the pot. Back in the oven for 15 minutes. pull out and vent the rice-do not flip. (if you pull the lid off and no moisture is on the bottom of the lid, add ~1/4 cup of water.) Lid back on and inda oven for 10 minutes. Pull out and flip the rice once more, check the rice... pinch 1 grain and if it still has a hard center, back inda oven for 10 more minutes. pull it out and if a grain still has a hard center, leave it covered on the stove (no fire under it) for 5 minutes.
Finishing it in the oven is dummy proof. No way to burn the bottom of the pot.
