Best to use thin cut bacon and leg quarters or Cornish hens for this recipe. There are quite a few variations on this recipe, but there are a few constants-brush the chicken with lemon juice and oil, and use garlic, onion and potatoes...you can throw in carrots if you like. :thumbsup:

I have a couple of specks with their gizzards and hearts soaking up seasoning for a date with a hot pot on Saturday afternoon.

FWIW, I have this on my left ear...it hurts and it sucks!

I wore a beany hat a lot this winter because of the cold, and I sleep a lot on my left side. Started on the left ear when we got back from our goose trip. I finally figured out what it is and what caused it.

I used a 4~5 lb. fryer hen and had to bake the chicken about 45 minutes longer than suggested in the recipe to cook it enough for it to be tender. Leg quarters or split cornish hens would be better suited for this recipe. Also, I sprinkled a little paprika on the chicken for the last step prior to placing on top of the potatoes. Also, I used the same pieces of bacon throughout the entire cooking process. i just removed them to a plate, flipped the chicken, then put the bacon pieces back on top of the chicken, sometimes flipping them to ensure even cooking.

t_b, also- 1/2 cup is the total amount of oil. about 1/4 cup will be used for brushing on the chicken, the rest is used to mixin with the potatoes.
