I cooked the Redbean gumbo today for a family Christmas Party on Saturday...took some pics. for ya'll.. :thumbsup:
first you make da Roux!

Soaked the beans overnight in water, then I boiled them in Ham stock with 2 bay leaves with smoked turkey necks for about 2 1/2 hours till they were tender:

While the beans are cooking, fried the sausage, andouille and cubed ham till they were brown. then cooked the onions, celery, garlic, and bell pepper till the onions started to caramelize. Added the meat back in.

when the beans were done, pureed 2/3's of them in a blender and added them to the pot with the whole beans, added the roux, cooked for 1 hr. and finished with sliced green onions and parsely. checked seasoning and added La. hot sauce, salt, black pepper, and cajun seasoning.

just peaked in the son of thread...quackerattacker shot 4 geese so far to add to their count. that's 75-63 for the rambler. He said the cold weather has pushed the ducks out...so that means they flew south... To US.:clapping: :yes: :thumbsup: :beer: It's gonna be a fun week guys. :yes:

INDA, it's probably not going to be very nice with the survey numbers that they reported in the paper this morning. It's looking really really good for the second split opening. Hoefully you can keep some water.

I'm sittin here drinking coffee and the alarm is not suppose to ring for another 45 minutes...to short to just go back to sleep, and too soon to let the dogs out and load 'em up...so I'm sitting on DHC killin time. I'm not gonna lie-I'm excited about the prospects of awesome hunts and can't go back to sleep!! :yes: I got a great feelin about this weekend!! I talked to my Biologist buddy and he said, "It's absolutely CRAZY with birds down on the coast!" :eek: :yes: :beer: He pumped me up BIG TIME...cause he's not one to exaggerate!

Quackerstacker busted 4 more specks over "the son of" so that puts the tally at 75-67. we'll have 4 gunners over the deek sat. and sunday. lets just say that deek won't have a curse on it when it leaves La. :hi: :beer: I called the witch doctor...I'm bringin some special voodoo magic mojo to throw on it.. :biggrin:

ya'll be thinkin about us while the rambler is bobbin in swamp water on the edge of the gulf of mexico...

guess it's time to let the dogs loose...let me grab my swamp slippers...merry christmas everybody-don't know if I'll get a chance to tell ya'll between now and then.

Inda, you will certainly have some good gris gris with you for true. I am sure you are like me in that you have a bad envy (on-vee for you yankees) for dem ducks.

And I'll bet you a dollar to a doughnut that with all that boudin and cracklins and red bean gumbo, and hot sausage po-boys, and the rest of that menu you better not forget your lipitor.
