Agreed. I did learn a lesson on crappy processed cheese. It will clump like MFer and not melt.

I use a variation of that seasoning as a rub on baby back ribs. Perfect combo with a sweet baby rays BBQ sauce.

I couldn't get it to reheat worth a dam. Just broke, turned to butter.

if you want it creamy-yea. But the sauce breaking does not affect the flavor IMO, just the consistency. It won't be smooth.
