guess I might as well post up the recipe I'm lookin forward to trying....
(A John Folse recipe.)
Praline Duck Patties
4 boneless, skinless duck breasts
3 TBSPS Butter
1/2 cup diced onion
1/4 cup diced celery
1/4 cup diced red bell pepper
2 TBSPS minced garlic
1/2 cup chopped parsley
1/2 cup chopped green onions
1/2 cup seasoned Italian bread crumbs
salt and black pepper to taste
granulated garlic to taste
1 cup milk
1 cup water
1 cup vegatable oil
1 cups pecan flour or finely chopped toasted pecans
In a medium skillet, melt butter over med.-high heat. Add onions, celery, bell pepper, minced garlic, parsley and green onions and saute 3-5 minutes until wilted. Remove from heat and set aside. In a food processor, mince duck breasts to a sausage like consistency. Transfer minced duck meat into a large mixing bowl. Stir in cooked veggies and Bread crumbs. season to taste with salt, black pepper and granulated garlic. Form meat into 4 patties (~2" wide and 1/2" thick) then set aside. In a small bowl, whisk together egg, water, and milk and set aside. In a large cast iron skillet, heat oil over med. high heat. Dip patties in egg wash and then in toasted pecans Fry approx. 10 minutes or until golden brown.
I might add a little hot sauce to it though....
Bet it would be good with some camp hashbrowns on the side!!
