I've dropped about 5 so far since last Monday, but I still have a ways to go to get back where I was at the end of summer. I've decided to put off going to the doc until after our Mardi Gras, which is February 15th. Hopefully by then I'll come up with another excuse not to go. I can walk fine, I just can't bend it very far. I'm keeping a brace on it daily and icing it nightly, but there is still a lot of fluid around it and it looks deformed when slightly bent.

good boudin, the stock is concentrated so you use all of it in the mix, some of it is used to cook the rice and the balance is used to moisten the mix. Bad boudin-the stock is not concentrated and not used to cook the rice. Also, bad boudin uses up to 20% liver.

I put it on hold until today. We're supposed to get a pretty decent snow today, so figured it'd be a good time to try it, since I'll be cooped up in the house anyway. I'll let you know how it's going.

:thumbsup: The hardest part about making it is nailing the rice, not too mushy, yet not dry still individual grains. I should mention here that you can use a rice cooker, just remember that most rice cookers measuring cups are 3/4 cup-not a full 1 cup. You'll have to figure out how many rice cooker measures to use.

I'll also add here that the pepper measurements are all level. i.e. use the back of a butter knife to level the top of the measuring spoon.

And I did use the rice cooker, using the stock in place of water. I measured out 4 cups of rice into the cooker- I never use the cup/markings that came with it, so I should be good with using all the rice that's in there. I haven't made rice in a pot in about 15 years, so figured I better stick to what I know :lol3:

Holy hell, swamp, this stuff is awesome. Not gonna say it's better than scrapple, because it's completely different. I can't stop eating it by the spoonful, waiting to case it. It's really, really good.
