The pepper jack boudin balls are really good, but the petro station in welsh makes them stuffed with cheddar and jalapeño and they are awesome. The boudin itself is nothing special but the cheddar and jalapeño take it up a notch.

Hey Assa...

just thought of another way you can use boudin... Boudin bombs...

boudin stuffed jalapenos wrapped in bacon and grilled. AWESOME appetizer!!! :thumbsup:

made 16lbs. of chicken boudin sunday. fried boudin balls tonight and cased the rest of it.

BTW...
if you use chicken livers and happen across something that looks like this attached to one of the livers, cut it out and throw it away. It's the gall bladder. It's darker in color than the liver about the shape and size of a small acorn and very strong in flavor. One slips by at the processing plant every now and then.
