I am a deerstalker. Deer are open all year round here. Late Spring early summer is the most productive time for hunting (November, December).
But if your after a trophy april is the rut and is your best bet.
In the north island we have Red deer, sika deer, fallow deer, sambar and rusa.Rusa and sambar are very difficult to hunt and numbers are very low.
Red and sika are available on public land and you can hunt them here free of charge although you do need to get in touch with department of conservation who will issue you with a permit no questions asked.
The south island Has readily available Red deer, fallow, chamois, Tahr and a few other deer species which can be difficult to get access too unless your into your guides and/or fenced game ranch stuff.
Duck shooting opens on the first weekend of May and to find a productive place to hunt can be a little more difficult but by contacting land owners and fish and game prior to your trip you will have no problems.
