Crock Pot Duck

Postby Penguine » Mon Oct 24, 2005 8:25 am

Has anyone done duck breast in a crock pot? I have about 10 breasts that I want to do in the crock pot. Thinking of doing it like this...

Toss em in a fry pan for about 3 minutes per side, take em out and toss em in the crock pot.

dump in some BBQ sauce

Cook em in the crock pot for about 8 hours (low heat). They should be done about the time I get off work.

Thoughts?

Ive done that for goose in a way.....get a few breast fillets, fill the crock pot with water so half of the meat is covered, add 1 to 1 1/2 sticks of butter, not margarin, 1/2 chopped onion, 2 sliced apples, pepper and seasoned salt to flavor. U can also add a little bit of apple juice or like 1/8 can of beer and cook for 8-9 hrs on low as u mentioned. It is soo good.......my mom didnt even know it was goose...she thought it was beef! the bbq sauce does sound tempting!

Well I made up some crock pot duck, it was pretty good. Here is what I did:

2 large onions
4 Cloves of Garlic
10 Duck Breasts (Large ducks - Mallards/Widgeon)
2 Bottles of Sweet Baby Ray's BBQ Sauce

Chopped up onion #1 and stuck it in the bottom of the crock pot.
Chopped up 2 cloves of garlic and stuck it with the oinion
Layered 5 duck breasts on top of the onion and garlic
Dumped bottle #1 of BBQ sauce on top of these layers

Chopped up onion #2 and stuck it in the bottom of the crock pot.
Chopped up the last 2 cloves of garlic and stuck it with the oinion
Layered 5 duck breasts on top of the onion and garlic
Dumped bottle #2 of BBQ sauce on top of these layers

Stuck the cover on the crock pot and set it on HIGH for 4 hours

Duck was great, flaked apart, very tender and moist.

In hindsight I would probably only use 1 bottle of BBQ sauce. 2 seemed very excessive and most of it all went down the drain/garbage disposal cause there was simply to much BBQ sauce.
