Buffalo Wings ?

Does anyone make Hot Wings with duck legs? I'm going to try it and figured others would have input. B/c nothing goes with :beer: like wings.

i do it a few times a year, but i use legs and wings.

there may be better ways, but mine is fairly simple.

ligtly coat the meat in yellow mustard.

roll in flour(i put a little salt and pepper in it.)

flash fry for 20-30seconds

put in pan

mix 2 bottles hot sauce with a tub of butter, and melt that on the stove

pour the sauce over the ducks

put it in the oven at 275

every 20 minutes or so stir and rotate the meat

in less than 2 hours they should be falling off the bone, just before they're done add some more hot sauce to the pan to give them some extra kick

That sounds awesome. I made mine by brining them for 4+ days in garlic salt and tons of red pepper flakes. Then dried them and coated in Flour, cayenne, salt and pepper mix. I fried them until done, mixed in a bowl with red hot and butter, and served. They were burning hot and my buddies and I couldn't stop eating them. I was glad to have a different way to prepare my birds.

the brining soundslike good way to add extra spice or other flavors. im gonna have to try that next time i do a batch.
