Smoked Gooose

Postby Scaup » Wed Feb 03, 2010 9:11 pm

Hello, We have smoked alot of canada geese this year and we are uncertain of the shelf life that is has. We usualy freeze it after we have smoked it and thaw some out every know and then to eat. Once we eat some we refrigerate that package. Is it neccisary to freeze it? How long will it still be good to eat in the refrigerator?

cold smoke or hot smoked? cold smoke its ok to freeze. hot smoke isnt ok.

for smoked fish i never go more than 4 days. i think 7 days with goose your really pushing it... if any doubt, smell it. it may look fresh but bad food never smells good.
