Whats a good one for ducks?
The group ended up with 420 birds.

add 25% ground pork then mix dry brine your choice ter/pep/ect
I get my brine from a smoke shop out of portland OR :salude:

If you want to get extra fancy add to that mix dried thyme and lemon or orange zest. I'd add a teaspoonful of thyme and a half-teaspoon of zest per pound. Make sure you do NOT get the white pith of the lemon peel - only the rind. The pith is bitter. :thumbsup:
