i made this again tonight, and we all love it. now my instructions invovle a lot of pans, but thats just cause its an easier way to type it out. you could easily do it in stages and just use 1 or 2.
-however you like, typicall 1.5 servings per person, more if they eat rice like we do
red onion, garlic clove, 1 jalopeno, 1 small bell pepper
-sautee them down till the onions are fully caramilized
-i like to put this on 1st and let them go until the rice is done
-personally i add salt, pepper, anise, and ginger to this
raw pork skin, boil it until its wekk cooked
-if you'd rather pork loin or any little cutlet wil substitute easy
-season with tumeric, redpepper, salt, pepper, paprika
once the rice is fully cooked add a can of tomato paste. 16 ounces is usually good for 4 servings of rice. mix it up well. add the sauteed veggies and mix. put this in a pan and spread it out. spread a little shredded cheese, i like monterrey jack for this, but its your call. spread the pork out on top, sprinkle a little more cheese on top, add a dash of parsley cause its pretty, and serve family style.
