Did a few new brines this weekend and birds came out awesome.

10 cups h20
4 tbls salt
2tbls tarragon
1tsp black pepper flakes
1tsp bells seasoning

10 cups h20
4tbls salt
1TSP clove powder
1tsp black pepepr flakes
1 tsp bells seasoning

Brine plucked ducks 6hrs then roasted at 425 for 25 min.

need more acidity. throw in some orange slices or lemon slices, perhaps cranberry juice

i like to do my brines for 36 hours
