Duck Hearts?

Postby crispy8034 » Sat Nov 06, 2010 9:20 pm

Curious if anyone eats duck hearts? I was thinking a handful of mallard hearts might fry up well with some onions
If trees could scream would we be so cavalier about cutting them down? We might, if they screamed all the time and for no good reason.

I've thought about that, too. I normally just breast out ducks but if I get enough mallards and both the liver and heart are edible I'll definitely prep them for roasting and get the insides out.

I've never eaten deer heart, but I sure do love the liver.

I save every one of them. They are awesome in rice and vegetable soup. I cut the top off, then split them in half lengthwise...

I eat them. Dove, deer. quail and pheasant as well. Pretty good fried. Just dont over cook them. They get a little chewy if you do.

I usually just fry the liver/heart on birds, plus the gizzard on doves. Hearts are usually the best, but I just had a "bad" one the other day from a black duck. Can't say why, but once in a long while a bird heart tastes off.

I save the hearts and gizzards..we either save them to make sausage or make dirty rice with 'em at the camp...
every now and then we'll save the livers-but only late in the season...for some reason late season duck livers taste better...anyone venture a guess as to why??

More fat in the liver. I sometimes fry the hearts up and cover them with franks hot sauce. Other times I just give it to the dog and cat, they love that stuff. Honker hearts are also good, just have to cut those up in quarters cuz they are too big to cook properly.
