Duck Burger??

So far this year, the amount of ducks and geese taken far exceeds my consumption and I am looking for a way to put the extra meat to good use.
I get the majority of the deer that I kill ground up into hamburger by the local butcher. I was wondering if anyone has ever had duck meat ground up the same way. I was thinking of just adding it to the deer meat and grinding all of it up together.

make jerky, chili, pasta, stir fry. sounds like you have some fun ahead of you... sausage would be more of a route id take. duck burger just sounds like a waste.


btw. i add bacon fat to my burger and sausage. the fat keeps it from crumbling.

Reelfowl,
Up here in maine we shoot alot of sea ducks and most of mine turn into some delicious burgers. After a little experimenting the recipe that we've come up with goes something very loosely like this:

8-10 breasts cut into about 1 inch cubes
half an onion
2 egg yolks
1/3 cup of jalapeno slices
6-8 slices of bacon sliced thin
a few shots of worcestershire
garlic salt
ground black pepper
1/2 packet of ranch mix
panko bread crumbs as needed to bind it

mix it all together and then grind twice to mix the spices
i suggest making up a small test pattie and adjusting ingredients as needed, enjoy

I agree. I've never ground duck but I have seen chicken and turkey done. Not very appetising (spelling) I would try jerky or sausage. Let us know what you end up making.

I've been making "sliders" from duck and goose breast meat. Mixed with bacon (1/4 lb bacon to 2 lbs duck) and chipotle pepper.

Cube the meat, place in a freezer to chill and firm up. Grind together using a fine grind. Mix in a Tblspn of chipotle pepper (ground) and that's all.

Use the smaller potato dinner rolls instead of big burger buns, toast them if you like. Grill or fry a patty, top with a slice of onion and a cheese of your liking. I've tried blue cheese and it's great. Mustard or ketchup, your call. Have some friends over and watch them disappear... :thumbsup:

a lot of mine go to this. i love duck chili, for jerky i prefer goose. either way i don't grind it. for chili i cube the meat, and i slice finely for jerky. either way its a good use.
