I serve this simple spread on baked bagel chips, and it's always a hit.
-6 to 8 smoked duck breasts. Or you can use 2 goose breasts.
-Mayo to taste
-favorite mustard to taste
-Dash of Tabasco
Smoke duck/goose breasts and allow to cool. Purree into a fine powder and mix with mayo, mustard (not too much), and Tabasco sauce into a pastey spread. And that is it. And I use the left overs for sandwiches for the blind. This recipe goes over very well.
It's hard to pull 1 inch through 6 inches of material while doing "the dance", and looking skyward.
