Rare?

Anyone cook their duck rare as a chef would recommended? :huh: I sure dont, but wonder if anyone swears by it

I eat most of my ducks damn near raw. same with venison and steak.

duck and beef dont carry any food born illness like chicken... inless mishandled or cross contaminated. duck raw is actually pretty good.

I have been trying to work up the courage to peel the skin back and bite into a duck breast right in the boat just to mess with my hunting buds, my brother still thinks you have to cook duck like chicken.

Anything past med-rare goes to whoever will eat it for me. I cook almost all game to 120 and pull it out, rest then devour :beer:

Just grilled 20 mallard breasts last night at the hunting club with the, tried & true, jalapeno peppers and cream cheese stuffed into an opened "pita pocket" and wrapped in bacon... Cooked Rare only. Mashed potatoes and a salad! Chianti. Wow, was it good!!!! Nine people, nothing left over.

My recommendation to anyone who "thinks" they don't like their game cooked rare, is to turn down the lights so you don't see the red. You'll never eat it medium again!

I introduced some fellas who were skeptics about duck meat being good to some medium rare bone in breasts cooked rare over an open mesquite fire. I then sliced(chopped) into steaks and grilled slightly until no red was showing. I fed it to them in the dark, and only much later, after every bit of it was gone, did I mention that it was rare... :biggrin:

alive, raw, rare, burnt, how my wife likes it
