Sausage from sea ducks?

Hey guys,

I'm going out in February for some eiders and oldsquaws. I also have a new sausage stuffer. I'm thinking of turning these sea ducks into some sausages. Any recipes out there? I think it might be a different sort of idea..... most people aren't into fishy sausages.

I was curious of the same thing. I shot my first eiders this year and found that they tend to be a little bit more gamey than normal ducks even after a good brine. I may try one of these basic sausage recipes and if it is to gamey still I will just mix in more pork or maybe some other duck like mallard.
