A friend sent me these recipes for duck prosciutto and I want to give it a try. Anyone done this? Any tips?

Got this one bookmarked. I got an Italian last name-I gotta try it! Thinking about making some as an appetizer for the next party I go to...maybe the superbowl party... :thumbsup: I'll let ya'll know how it is. it would be good with a little creole cream cheese and jalapeno on a cracker! or smoked sweet red bell pepper! MMMM!!

here in harpswell maine (the salty chilly air) works great.

also i like to brush mine with gin and mix of fresh herbs before curing

what herbs do you recommend? I'm planning on making some...

I made it and I liked it. After the 24 hours in salt and rinsing it off I seasoned it with pepper before wrapping it in cheese cloth. I'll to it again and try different seasonings.

Slice it thin.

i have 4 breasts hanging right now; i sprinkled with fresh cracked black pepper and broke off some fresh rosemary leaves and stuck them to the back sides of the breast. tomorrow will be 7 days so hopefully it will be ready.
