Duck Wontons

This is a great recipe for making ducks disappear. Anyone will eat them without recognizing that they're eating game. This recipe is to make about 50 wontons, because that's how many wraps come in the package at the grocery store. I recommend making that many and laying them on wax paper, placing in the freezer until frozen then into a ziploc bag. You can cook them fresh or throw them directly into hot oil when frozen, making them a pretty quick snack or side to any asian dish.

3-4 Mallard Breast
4-5 Tbs. Soy Sauce
3 Clove Garlic
3-4 Green Onion
3 Tbs. Fresh Ginger
2-3 Cup Napa Cabbage, Finely Chopped
1 Package Wonton Wraps
Corn Starch
Sesame Oil

First put the garlic and the ginger in a food processor and blend until finely chopped. Then add the duck meat which you may need to cube up to get it to fit in the processor (a blender might also work). Process the duck meat until it's finely ground, then add the soy sauce. At the last second you can add your pre-chopped green onions. Remove to bowl and stir in the Napa Cabbage. This is your filling.

In a small bowl mix 1 Tbs. Cornstarch into about 1 Cup of water and add a little sesame oil.

Make your wontons by putting about 1 heaping tbs. of the filling on a wonton wrap, fold it over and use the cornstarch mixture to "seal" the wrap. Freeze or drop into medium hot oil until golden brown. This also works for egg rolls but you will want to add some carrots or other filling. Serve with any sweet or spicy dipping sauce that you like.

Asian flavor goes really well with duck, looking forward to trying this out!

are you precooking the duck breast in this? or putting it in the wrap raw
