interesting read Jehler...Learn somethin new everyday. I believe that the taste buds of people today have morphed to prefer a more milder flavor from eating so much domesticated meat. back then-people still ate a lot of wild game on farms. I'll add ruddies to the list and shoot one next chance I get.

i shoot every ruddy i see..legally of course.

knew them as butterballs before i knew the word ruddy. they are good. my only tip for cooking them is to slightly separate the skin from the body a little. it gets crispier that way.
Gig 'em!

X2 - had a handful of butterballs off the San Francisco bay in California this season. Granted the divers out on the SF bay are generally described as akin to eating your old waders... I personally have not ever been deterred or put off by the ruddies or buffleheads, etc.

I mentioned on another thread - if you ever get divers, spoonies, etc. with the less than desirable yellowish fat I crock pot them. Totally not original and there's tons of excellent gumbo recipes here i've seen. But I've got a twist for you:

Try sectioning the skinned carcasses up like a fryer chicken -
Buy either "New Mexico" style chopped green chili OR mexican Mole poblano sauce - these are both available in pre made formulation at grocers. Toss the meat + the mix + garlic, onion & a little salt and crock pot them on low for 6-8 hours.

The chili.verde or mole duck out of a crock pot will blow yer mind!! Great optional way to cook divers and cooties.
Why? One inquires why? Because, AMERICA !!
