Finally breaking out the fry daddy tonight. What will be the best type of oil to use here Canola or Vegetable oil? Any other tips?

duck fat is the best oil... n thats no joke, makes the best fries and baked potatoes
veg oil is what mostly used but anything will work. a lot of restaurants have converted over to palm oil

If you're using a fry daddy, vegetable oil should work fine. When I use my stove top and a dutch oven, I use peanut oil b/c it has a higher flash point.
Duck fat would be awesome, but if you're frying fish, I would try something else. Frying vegetables is a different story though.
