Y'all might think this is too much work, but I deboned one (except for the wings), then stuffed it with a mix of spinach, ricotta, bread crumbs, and some spices. Once it's roasted, you can slice right through it and serve up the slices. Damned tasty!
It's been a while since I did this, so do a web search on the ingredients to get an idea of good spices to use.
