Decided to expieriment today with some teal I had.
4 plucked full body teal
2 bottles dark beer.
dash of curry powder
salt and pepper
I cooked this in my dutch oven. i heated the oil and browned the onion, and the ducks, I then added the spices, and enough beer to cover the birds. I turned the heat to low and cooked for one hour. I then turned off th heat and let them soak for 4 hours. Heated it back up to a soft boil for 30 minutes then ate. It was delicious, the meat was just falling apart. Will be making it again soon.

That sounds fantastic. Its such a versatile recipe that can be adapted to any situation. I did something similar with a chucker and red wine, and fresh herbs a few weeks ago. I reduced the braising liquid with some flour for a fantastic sauce.
