How well does substituting duck in for chicken when making chicken and noodles with the old fashioned egg noodles? I've made it with deer before just never tried it with duck. Is there a good marinade to use when using duck in this situation?

I usually just pound the meat flat with a meat hammer. Then sea salt and cracked black pepper a dusting of flour and fry it up quick with butter. Pour it all over the noodles and it is very good.

Ill bet itd be good substitued in a fettucini alfredo stripped and fried
