Duck meat preparation

Postby Cold Feet » Sun Dec 04, 2011 4:28 pm

Soaking game in milk marinades in fat and lactic acid that tempers the wild and tenderizes the meat. We eat Duck Fajitas. Any fajita marinade will do. Cook veggies first then meat hot and fast. Taste frequently as to not over cook, should be overly tender.

Momma tried a new one. Slice a pocket in the breasts, fill with a mixture of finely diced pickled jalapenos and Philadelphia cream cheese. Wrap in bacon. Grill until the bacon is almost done. Dip in BBQ sauce (Head Country) return to the grill to candy the sauce. Repeat sauce, grill. We call it OMG Duck!
