Shot a couple GWT this past weekend and needed to cook them up so today I came up with a pretty simple sandwich. I breast the GWTs and put a little olive oil and seasoned them with salt and pepper. I sautéed some onions and red bell peppers in a pan and then seared the breasts in the pan after so get some of the onion and pepper flavor. Took the breasts off when they were medium rare and put them on a toasted ciabatta bun with garlic aioli and the onions and peppers. Made some homemade fries to go along with it. Never had a duck so tender and juicy as this. Give it a try and tell me how it is!
