The Perfect Chicken

HOLY Cow!
I know we've all tried every possible way to cook a chicken possible, but check this out and try it with ducks/geese if you want.

Cut the back of the chicken (not breast side) open and then crack the chicken so it lays flat. Garlic/Onion powder with black pepper both sides.

Preheat over to 450! with the cast iron pan IN it.....

When it's super hot, drop the chicken, skin UP into the pan, ssssssssssst....
Cook on 450 for 30 minuted then turn the oven OFF and leave it in there for another 30.
Baste if you want when the heat is ON but don't open the over when it's off.

AWESOME and easy...

I forgot... USE A BELL AND EVANS AIR CURED BIRD....
