Sausage

I need to clean out the freezer and have a fair amount of duck breast left, two or three dozen. I've heard several guys talk about making sausage out of ducks, I am thinking like brauts? Anyone have a recipe on how to make it? I am hoping one of the Inda bro's have something!

You ever had duck sausage?

You notice that I didn't put "Duck sausage" as the title, there was a reason for that. I knew sooner or later I'd get that response :yes:

check the stickies at the top of the page, some good ideas there to get you started. I will be trying my hand at making some in the next week or so.

I was recently looking through the archives on this forum for sausage recipes.


I have a goose breakfast sausage recipe posted up that is pretty good, you could use duck just as well. I also have a gourmet duck sausage that is used for appetizers and it is the bomb! Matter of fact-I'm gonna make some tomorrow so I'll take some pics. :thumbsup:

I'm probably going to make two different batches...I recently found this one and I want to try it (but I'm going to make a few changes to it as I'm not big on cloves, substituting coriander and thyme).

here is a Bratwurst recipe that looks authentic. I'd go 50/50 goose to pork

here is a Bratwurst sausage recipe I found for ya...looks good! just add whatever pork/duck ratio you want (i'd go 50/50)
