I know you got a ton of recipes, got any for duck or goose chili?

I have substituted beef and sausage with goose and venny sausage, but kept the rest the same. It was great but couldn't really tell it was goose, tasted just about identical. Got any recipes to really bring it out?

No I don't...sorry...
The whole point of making chilli with goose and divers is to cover up the extreme gamey flavor.

Won't be possible until September :smile: Just preparing. Usually get a couple hundred pounds of goose from early season and end up jerkying the majority of it. Would like to try some new stuff this year.

Bump.

Got a ton of geese already and I am looking for a recipe for this Friday. Having a party at the house Friday night so I wanted to cook a bunch up. Was thinking of just doing a chili with some of it for the non game eaters, then something fancy for the rest. Wanted to do something maybe a little sweeter and another possibly having to do with bacon. I am hungry as I am typing this so just about everything is sounding good. Do you have any of that latter recipes that will work for goose? I really can't tell the difference between goose and venison, but 'd like to stay away from doing the usual butter, onions and garlic saute.
