I got breast for about 12 doves and want to do something different with them...Any ideas would be great

I soak mine in buttermilk overnight in the fridge, drain, salt and pepper, wrap in bacon, grill. (please do not cook the heck out of them). 145 degree internal temperature.

I cook mine 1 of 2 ways
1. Marinade overnight in barbeque sauce and grill
2. Place jalapeno pepper slice on each side of breast and wrap with bacon. Hold this together with toothpic, then grill

6 tablespoons butter
3 tablespoons flour
2 cups chicken broth
1/2 cup sherry wine
Salt and pepper, to taste
Brown doves in heavy skillet or Dutch oven in melted butter. Remove doves to baking dish, breast down. Add flour to skillet and stir well. Slowly add chicken broth, sherry, salt and pepper; blend well and pour over doves. Cover baking dish and bake at 350 degrees F at least 1 hour.
Serve over cooked rice.

I cooking some on the grill yesturday afternoon they were great.
i marinaged them for 12 hours in italian dressing.
finely chop up some jaleopen peppers.
mix the peppers into cream cheese
spread the pepper/cream cheese mixture on the breast meat then wrap the breast with bacon.
throw em on the grill
after 5 mins of cooking flip them and then add more cream cheese
let them cook til the bacon is almost done.
they were great

Soak in buttermilk overnight. Then drain, dip in milk, dredge in a flour/Johnnys seasoning mix, repeat, then fry them. Damn are they good.

Only way we cook dove an have been doin it for years
Put a spoonful of cream cheese on dove breast
Place banana pepper or jalepeno slice on cream cheese
Wrap in bacon
Place on skewer
Throw on grill
Same recipe is good with woodies an teal breasts as well
