I got this marinade recipe from upper brandon plantation in Virginia. Until then we would anything not to have to take a goose home.
Now we almost fight over them. here it is :
1 cup soy sause
1/2 cup dry sherry
2 tbsp. sugar
1 medium onion
2 cloves garlic, chopped
1 tbsp. fresh ginger or 2 tsp. ground ginger
Mix together in a gal. zip lock bag or in a bowl.
Cut breast meat into bite size cubes.
Marinade meat for ( 2 hrs. ONLY) any longer the garlic over powers the meat.
Wrap meat in bacon .
Skewer with onion and green pepper. I place pepper then onion then wrapped meat . repeat till skewer is full.
Cook on hot grill about 3 mins on each side. as always with waterfowl do not over cook .
