Pan Cooked Duck with Andouille Sausage

Last night I cooked up some wood duck from my New Years day hunt, this is one of my favorite ways to cook duck so I thought I would pass it along. I have cooked any puddle duck this way and also goose, I used wood duck because it was what I had on hand.

Take the breasts and coat them with a little olive oil and season them with salt, pepper, smoked paprika, ancho chili powder and garlic powder on both sides.

Andouillie sausage cut into 1" pieces about 1/8" thick.

Place the breasts and the sausage in a cast iron skillet and cook over medium heat until the breast is cooked through to medium rare/medium depending on your taste.

Serve over rice or with any other side you choose.
