World's BEST Duck Gumbo

Here is without a doubt the world's BEST duck gumbo, lots of drinking and testing (drinking) has been conducted and here is the best:

Duck Stock Ingredients

3-4 whole ducks
4 quarts water
2 large onions quartered
4 stalks celery quartered
3 bay leaves
3 cloves garlic diced
1/2 teaspoons salt
1/2 teaspoon black pepper

Pour a glass of bourbon and boil ducks in a large pot of water along with all ingredients above. Simmer uncovered for 1 1/2 hours our until tender. Remove ducks and debone,discard vegetables and reserve stock. Chill the stock and skim of the solidified fat from the top and discard. Reserve the stock and proceed to make roux for gumbo.

Gumbo Ingredients
1 1/2 cups flour
1 cup oil
2 chopped onions
1 chopped celery stocks
1 cup chopped green pepper
4 cloves garlic minced
3 tablespoons chopped parsley
3 quarts duck stock
1/2 cup red wine
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon red pepper
1/2 teaspoon oregano
2 tablespoons Tabasco

Directions

In a large heavy pot make a dark roux with oil and flour . Add all vegetables and cook for 10 minutes until tender. Add stock, wine and seasonings then simmer for 15 minutes.
Add duck and sausage, bring to a boil, reduce heat and simmer on low for 1 1/2 to 2 hours. Long and slow is called for here...grab your drink and set it on cruise control. Serve over medium grain white rice with cornbread.

Quick question because ive never made gumbo before and i honestly dont know if its a joke or not. The glass of bourbon? Is that for drinking or actually for the mix because it sounds like it would go well with both.

Not sure what that is in that pot but that ain't southwest Louisiana gumbo. Other words now as Cajun food. Real gumbo ain't got all that mess of ingredients. Gumbo is floor and oil to make a rue and meat, onions ,sausage and some black pepper use water to build up the gumbo. Bowl of potato salad for a side. That looks more like a soup to me, but that's my .02 cents.

Kinda close to the duck gumbo we grew up on in Avoyelles parish. By the way, I see the sausage in there but in the ingredients I don't see sausage on the list. We just always called dad's duck and sausage gumbo. Pretty much had it every week when the weather was cool since there was a freezer full of ducks and 6 duck hunters in the family. Lots of mallards... mmmm
