Well i got a electric smoker for christmas!!
Hunting season is winding down and i am starting to think of things to cook and get the smoker all set up... Lets hear some of your guys smoking tips.. recipes.. Im new to smoking! Really want to do some sausage and sticks out of goose and duck for sure!! Have made deer sausage before with dad

I use my home made vertical barrel smoker, but the process should be the same. For whole duck I brine for 4-8 hours in a standard water, salt, brown sugar solution. The brining is an essential step. After a light seasoning I smoke for 1 hour at 200-225 F and then finish in the oven. Of course cooking times vary based on size of duck.
