Im whole cooking some specks tonight , was going to cook them one at a time at 500 degs for 25 mins . right now they're soaking in fresh rosemary ,fresh squeezed oj 7up and worcestershire . what do you guys think

Hard to fudge up a nice plump young speck.
I think I like them best with just the basic salt and pepper rub.
Place on a roasting rack with a inch or two of water in the roasting pan ,helps keep the smoke down.
500* -550* 25 minutes ,they turn out amazingly good !
Lifes to short to sweat the small crap !
Lighten up and have some fun ,before ya die !
