As some of you know, my grandmother was cajun french. this is her recipe...
1 cup Sugar
1 stick real unsalted butter
3-4 Bananas (dark yellow, with brown spots...starting to turn. Browner the better!)
1 tsp. Baking Soda
1 tsp. real vanilla
1 1/4 ~ 1 3/4 cups flour (use more for cake like bread, less for moist bread)
1/8 tsp. salt
1/2~1 cup chopped pecans (optional)
preheat oven to 325*
cut butter into sugar with a dough cutter. cut bananas in, then add egg, baking soda and vanilla, stir in well. sift flour with salt, add pecans and fold in lightly. In a buttered and floured bread loaf pan, pour in batter and bake 325~350 approx. 1 hour.
The Cajun 7 Course Meal; 1 lb. of boudin and a six pack of Abita beer. Save the Marsh, Eat a Nutria!

Had some awesome BB French toast in Costa Rica...think the syrup was a mix of natural syrup with water and powdered sugar...kind of like mixing syrup with cinnamon roll frosting.
Will have to try this one.
