Cajun/Southwestern Boudin egg rolls....

Made these last week at a cook out, they were pretty damn good!!

1 lb. smoked boudin uncased (use smoked boudin if you can get it! if not, add a little liquid smoke to the filling)
1/2 cup black beans (from a can, drained)
1/2 cup sweet corn (from a can, drained) you could use off the cob, but cook it first.
(optional- raw baby spinach....as much or as little as you like; it will cook when you fry the egg roll.)
1 cup pepperjack cheese in 1/2" dice
1 pk. egg roll wraps
2 TBSPS corn starch in 2 TBSPS water (egg roll glue)

fryer and oil

Avocado ranch dipping sauce:

2 fresh ripe avocados
1/2 cup hidden valley ranch dressing (or to taste)
pinch of salt
1 tbsp. lemon or orange juice (acid to keep the avocado from turning brown)

to Cook:
mix up the dipping sauce, cover and put in the frig.

mix up filling in a bowl, lay out wrappers and stuff with 1/4~1/3 cup of filling, wrapping tightly sealing the edges with the cornstarch and water (plenty of videos on youtube on how to wrap egg rolls properly). when all are done, fry at 360~375* until brown, place on paper towels to drain. let cool and serve with dipping sauce.
