Wild Boar Sausage

Just getting around to grinding up some hog meat from a Texas hunt in Feb. Any of you guys make your own sausage from the stuff? Let me know your favorite recipe!

be sure you get the glands out, or the meat will have a strong taste.

Jackpot! Thanks Inda. They were cleaned well. Have already eaten all the tenderloins, shoulders, and bacon. The hams are most of whats left so theyll be ran through the grinder here shortly. Cheers.

JalapeƱo and cheese is the best! All my deer, duck and elk is always getting Mild Italian and spicy italian. Its a nice change!
