fried duck

For those of you who haven't tried it yet deep fried duck is an absolute favorite in our family.

Cube 2 duck breasts making bite size pieces

Coat cubed breast in your favorite breading (we use totally wild brand)

Fry with vegetable or peanut oil in a deep fryer or skillet. 3 minutes or until medium.

Mix ranch dressing 2:1 with franks red hot. Dip the duck and enjoy

Fried duck and goose is like crack in our house. Can't stop eating it!!! Wife gets upset when I don't fry it...

try rolling the duck bites in spicy mustard before dry mixture...

We fry 80-90% of my seasonal bag and grill the rest with bacon.
The family tends to prefer the fried (dipped in honey mustard).

Soaking the meat in salt water for 1-3 days in the fridge (change water/salt daily) is standard practice.

I have never fried duck. But that is going to change very soon... sounds delicious. :thumbsup:

I like to use Jamaican Jerk seasoning on fried duck. Sprinkle the jerk seasoning on the cubed meat, roll in flour and fry until medium rare.

I use medium high heat on the stove top. After about 3 minutes i place one piece in the oil in the center of the pan and wait for the bubbles to pic up then add the rest. Very scientific! Then cook until golden brown. If using a deep fryer set at 400 degrees and fry for a couple minutes. Duck is delicious medium-medium rare. If the breading is crispy the duck almost cannot be undercooked.
